Tasting Notes
We tasted this wine out of both Clayver ceramic egg and barrel – a fascinating exercise, giving an idea of how the final blend will come together. The barrel had a creamy sweet nose with cherry fruit and darker layers too, with spicy intensity. The wine grows in the palate, building in power and intensity towards an explosive finish, all cut by nervy acidity. The ceramic-aged part is tighter, keeping more bite to the fruit and acidity, with an intriguing herbal note – and you can see how together they will make for something special.
