Undeniably the standard-bearer at this address, La Dominode is one of the most concentrated wines in Pavelot’s impressive array of Savigny Premiers Crus. There’s a significant swathe of old-vine fruit, with 40% from 90-year-old vines, 30% from 40- to 50-year-old vines, and the remaining 30% from young vines (10-15 years in age). At this stage, the wine is incredibly tight – the intense nose not yet revealing much at this stage, needing time for the expressive aromatics to unfurl. The palate nevertheless shows this has everything – with a stony minerality that cuts through the powerful fruit, a core of tightly packed red berries, yet with a silken mouth-feel. Guaranteed to be a phenomenal wine with time.

Sweet Spot Outstanding - From a very large 2.2 ha holding; two-thirds of the vines are between 70 and 80 years of age and the remaining vines are approximately 20+ years old - This is at once the spiciest and the most floral-suffused nose in the range with its ripe yet ultra-fresh nose of various dark berries, anise and newly turned earth scents. The mouthfeel is also intriguing as it combines excellent density with an appealing sleekness that carries over to the mineral-driven, powerful and compact finale that is wonderfully persistent if very clearly built-to-age. This is almost always Pavelot's best wine and it is highly likely to be so in 2022 as well. Drink from 2024+
The 2022 Savigny-lès-Beaune La Dominode 1er Cru, one of Jean-Hague Pavelot's favorite cuvées this year, has a generous bouquet of black plum, raspberry, and a touch of pressed white flowers emerging with time. Very well-defined and focused. The palate is medium-bodied with slightly edgier tannins than other Premier Crus - maybe a bit more angular at the moment, yet that lends plenty of tension towards the finish that fans out beautifully.
