Domaine Paul Pernot has the largest holding of Premier Cru Folatières – with three parcels that produce arguably the most complete expression of the site. A standard-bearer for this Puligny-Montrachet-based estate, it’s a gorgeous wine in 2021. Classical white Burgundy, the nose is intensely mineral – with chalky, flinty tones mingling with smoke and toast. The palate is sleek with bright, lime-edged acidity and a sherbet tang that makes the mouth water. There’s a slight phenolic grip that brings structure and texture, with the new oak (15-20%) well-judged but needing time to integrate. The finish is long, mineral and saline. Restrained yet vibrant, this is delicious. Unfortunately with 2021’s small crop, volumes are scarce, with just nine barrels versus the normal 60-65.
