A tasting at Domaine Jean-Marc & Hugues Pavelot is a masterclass in the varied terroirs of Savigny. Pavelot produces seven different Premiers Crus all with distinct terroir-driven nuance and character. It is hard to pick a favourite among them, but La Dominode is one of the most concentrated wines from the domaine’s impressive array of Savigny Premiers Crus. The moderately structural, strict tannins bring fantastic depth and are beautifully balanced by the natural fleshiness of the mid-palate. There is a distinct saline minerality that nicely complements the ripe strawberry and red cherry fruit. The tannins are sinewy, dynamic and well-integrated with fresh acidity and ripe, red fruit. This is perfectly pitched, top Savigny.

The 2020 Savigny-lès-Beaune La Dominode 1er Cru is the most backward, surliest of Pavelot’s red ‘20s, black cherries and boysenberry fruit, pressed violets and incense emerging with time. The palate is medium-bodied with sappy black fruit, slightly chewy tannins but with decent weight on the finish. Just a bit "serious" at the moment. Hopefully it will lighten up in bottle.
