Making serious wines in under-the-radar Savigny, Pavelot has drawn high praise thanks to a combination of exceptional raw materials, top-notch winemaking and very reasonable prices. To Bill Nanson “this domaine is right at the top of the price/quality curve… If the price were to double again, it would still be below that of most Vosne premier crus, and the comparison is not a stupid one” (2012). The 2016 is no exception in terms of quality; La Dominode is one of the best sites in Savigny and Pavelot have one of the finest plots. Two thirds of their vines here are 70+ years of age and this imparts serious depth, complexity and richness to the finished wine. For Neal Martin, this “Savigny-lès-Beaune La Dominode really showed the class of this vineyard”. The only negative is availability and with such scarce quantities available, once it sells, it will be near impossible to find again.

The 2016 Savigny-lès-Beaune 1er Cru La Dominode has the most refined and sophisticated bouquet among Pavelot's 2016s: detailed with blackberry, briary, hints of black olive developing with time in the glass. The palate is medium-bodied with fine grain tannin, a satisfying sense of symmetry with a poised and long, tensile finish. Excellent. This is almost as good as the outstanding 2015 last year.
