It’s difficult to make broad statements about a year like 2023 in Bordeaux. Following on from our vintage overview, we delve further into the year, breaking it down by commune to offer insight on how each subregion fared in this singular vintage

Go into any winery in the world, and it’s now unusual not to find a glass wine globe or clay amphora lurking in the corner. Oak has long been the traditional ageing vessel for wine – light, easily transportable, the grain fine enough to allow micro-oxygenation (aiding the polymerisation of tannins, making the wine more supple), and, especially when new, the ability to add toasty, spicy complexity. But with technology and global warming, many winemakers are looking beyond oak – and Jean-Marie Fourrier is one of them.  “We noticed the barrels generating the most problems were new oak,” says Fourrier. He and his team had been monitoring each barrel during élevage, and started noticing a trend. They observed that the volatile acidity was 0.2-0.3% higher in first-fill barrels. To compensate for the higher volatility, Fourrier had to add more sulphur to those barrels, something that he’d like to avoid – feeling that higher sulphur additions can mask the terroir.  But why were the new barrels the most volatile? With climate change, trees – Fourrier argues – are growing more quickly, meaning that their trunks don’t have the same density, and this is responsible for the increased volatility. He’s not alone in paying attention to the density of wood; it’s something that Clos de Sarpe has started monitoring, weighing each barrel and noting how this impacts the wine during élevage. Fourrier also feels that climate change has impacted cork, as he told me in 2021 – noting how cork is harvested every seven to eight years versus the 20 of yesteryear. The corks are less dense and this leads to higher oxygen transfer – it’s one reason that he chooses to wax his wines (instead of metal capsules), to help counter the quality of the cork itself, something that Olivier Lamy also believes is important.  With the extremes of climate change, the size of harvests varies more significantly than ever before – from the lows of 2021 to the highs of 2023. The pHs of wines are higher, making winemaking all the more tricky – a more challenging environment for yeast and higher risks of bacterial spoilage. Producers need to handle their wines more carefully, as well as juggle the vessels required for such extreme yield variations. If barrels are left empty, they become a breeding ground for bacteria, especially brettanomyces – so having the right number of vessels for your wine each year is essential, not to mention retaining a balance of new and old wood, to keep both a consistent style and not over- or under-oak the wines. (Some producers also only keep barrels for a certain number of years, again to avoid bacterial spoilage.)  “How can I age wine, keeping freshness, keeping purity?” says Fourrier, “Is 100% oak the direction? I don’t think so, to be honest, I think it’s a balance.” There were two options for him: either increase the level of sulphur additions, purely for the “ideology of wood” – or to evolve.  For him, using amphorae and stainless steel barrels alleviates some of these pressures – offering lower volatility, almost no bacterial risks and the vessels can be stored empty and more easily cleaned, not to mention they don’t need replacing. While he notes he is not about to release a “Cuvée Amphora”, ageing 20% of his wines in these alternatives allows for lower volatility, lower total sulphites and, in his view, helps give the wines freshness, complexity and a sense of place.   The 2022 vintage is the latest to bring these challenges to the fore; a return to a year born of global warming after the tricky, cool 2021. While for once they escaped the threat of frost, conditions were hot – although, unlike in 2019 or 2020, they received enough water to allow for a more plentiful crop. Gevrey-Chambertin saw a massive storm in June, bringing with it 100mm of rain in just an hour or so, flooding the streets of the village. Although it seemed devastating at the time, it was exactly what the vines needed to survive the dry stretch to the end of August and harvest at the start of September.  Although harvest dates creep earlier and earlier, Fourrier feels that some are picking prematurely (“We don’t do a Crémant,” he jokes). “Terroir needs to be revealed by phenolic maturity,” he explains, saying that his team started in early September. With the warmth of the year, he used around 15-20% whole-bunch to help retain freshness and elegance, and, as we’ve seen elsewhere so far, the alcohols are modest – sitting between 12.8 and 13.5%. The wines combine some of the characteristics of 2009 and 2015, Fourrier feels, yet are fresher, with an approachability that – as we have found – will make them easy to drink in their youth, despite having the structure and weight to age.  But now Fourrier’s mind is occupied by the 2023s, the wines just in the cellar – absorbed by the potential of the next vintage. It's this slow and constant evolution, the change and challenges, year in, year out, that keep him interested. With only one shot every 12 months, this business is, he says, “an internship of 40 years”. And it’s that approach – a modesty in the face of everything despite his reputation, constantly pushing forward, studying everything and never complacent – that makes Fourrier one of the region’s leading names. Lisa Perrotti-Brown MW has caused quite the stir. In her Bordeaux 2021 en primeur report, her first for her new publication The Wine Independent, she scored some wines below 80 points – and just 20% made it above the 90-point mark. She’s a woman on a mission, determined to bring honour and integrity back to wine criticism. The Master of Wine and Robert Parker protégée stepped down as Editor-in-Chief of the Wine Advocate – the leading fine wine publication – last year. She was tired of what had become a corporate life. Michelin took over in 2019 and her time was increasingly spent in meetings, doing reporting, looking at corporate responsibility as well as managing her team and making sure everything was going to plan – a plan, she emphasises, that was not set by her. Most importantly, her senior position took her further away from what she really loved doing – writing about wine. “I love to sit down with winemakers and capture that story that is not on their website, that is not in their marketing material. Something that is real and raw. There is not enough of that,” she tells me. Her view is that it’s the story that makes wine “more than just a drink” – and that’s why people spend hundreds of pounds on a bottle. This storytelling is what she’s looking to do with her new, small outfit, The Wine Independent. Importantly she’s partnered with Johan Berglund – a professional photographer (whose beautiful images we've used here) – to bring those stories to life, with a modern platform that is a world away from most other critics’ sites (often “a wall of words”, she says). As the name of the new publication suggests, Perrotti-Brown is making a stand against publications that she feels no longer put the consumer first. Her inspiration is Robert Parker’s original operation – the Wine Advocate started as a small newsletter shared with friends. “Essentially a mom-and-pop shop”, she explains, getting back to basics, with minimal staff and no fancy office with big overheads. For her, the goal is simple: to publish timely – and honest – reports, allowing readers to search for wines easily and helping them to discover something new. She doesn’t hold back voicing her concerns about the state of wine criticism today. She’s damning, believing there’s a trend not just to overscore, but that it’s a strategy to gain influence, helping critics be quoted by retailers and wineries – and therefore benefitting from “free marketing”. “When you see people coming in one or two points above everyone else and they hang on and wait until other people’s reviews have come out… I mean, come on, it’s definitely happening,” she says. The compaction of scores, however, is what really riles her. Everything sits between 95 and 99 these days, she suggests. “Nobody dares to go to 100 and nobody dares to go below 90.” Perrotti-Brown is outspoken about critics for whom the tiny number of 100-point scores they hand out is a point of pride. “There are a lot of critics who are just too chicken-s**t to give 100 points,” she says. “If you know a wine is 100 points, it takes a lot of bravery to put it out there.” Some critics – such as James Molesworth of Wine Spectator – don’t believe that a perfect wine exists, and therefore never give 100 points. “Which is ridiculous!” says Perrotti-Brown. “Why use a 100-point scale, if you are not going to use the top?” Her fear is that scores will lose all relevance and meaning. Indeed, she notes that retailers don’t even reference who gave the score they quote. “You go into a shop these days and look at the shelf-toppers and it doesn’t even say whose score it is – it just says 97 points. Every wine is 97 points!”  Critics should be fighting for consumers, she argues, rather than ingratiating themselves with wineries. “I know it is difficult, because we are sat there right in front of the winemaker, listening to their stories and I think the impetus is to really feel for that person, but you can’t. You always have to see it from the consumer’s perspective – it’s what Bob [Robert Parker] always told me. You are working for them.”  Hence, therefore, the broad range of scores that she felt was inevitable for a vintage like 2021. It was, she admits, a difficult vintage to assess in the evolution of Bordeaux. She’s adamant that she hasn’t changed the way she scores: “It just happens to be the worst vintage Bordeaux has had for a very long time,” she explains. Perrotti-Brown refers back to Robert Parker’s original benchmark for 90 points – an “outstanding” wine, a wine that is complex and age-worthy. For her – tasting very widely across the region – the majority of 2021s don’t meet those criteria, but she’s quick to emphasise that wines scored in the upper 80s are very good wines. “I think there has become some stigma over the wines scoring in the 80s and I don’t know why,” she says. Again returning to Robert Parker’s original scoring crib-sheet, these are “good to very good” wines and that is where, she feels, the bulk of Bordeaux 2021 wines fall.  Looking back at Robert Parker’s own en primeur scores in trickier vintages (2007, 2013, 1996), he too was awarding many wines eighty-something points, sometimes less. While Perrotti-Brown accepts the technological advances in viticulture and vinification mean you would rarely see Classed Growth wines receiving less than 80 points today, it only emphasises just how challenging the 2021 vintage was in Bordeaux. Of course, the vintage also produced some surprises. Despite everything that happened climate-wise, there were a number of wineries that produced outstanding wines, even by Perrotti-Brown’s assessment. “Some wines were absolute trainwrecks and there are other wines that are wow… you can tell these people worked their tails off,” she says.  The critic was certainly surprised and disappointed by other reports on the vintage, particularly given she’d worked and trained some of the people behind them. “When I am looking at other peoples’ scores [for Bordeaux 2021], 60% or more of the wines scored 90 points and above and that is astonishing to me,” she says, both confused and outraged. “Some of these wines, they are giving the same score ranges as the 2018 and the 2019s – I mean how is that possible?” Her report is a statement of intent. Lower scores may mean The Wine Independent isn’t as widely quoted by the trade, but what matters to Perrotti-Brown is whether consumers trust the publication. It’s a long-term game. “Eventually I hope consumers will look at all these other scores and say, ‘But what did The Wine Independent say?’” Perrotti-Brown took a huge risk stepping down from what is undeniably the wine world’s most influential publication – but she is confident she’s made the right choice. Her need for autonomy was the impetus for her to set up on her own, and she’s found freedom on her own terms. It is still early days for The Wine Independent and, for now, Perrotti-Brown is their only reviewer – although she confirms an additional critic will be announced in the coming weeks. Competing against more established publications with an extensive database of tasting notes and scores isn’t easy – but Perrotti-Brown has established herself as a disruptor in the field. Bodegas Roda has always strived to be a modern force in Rioja – not dictated by tradition and the region’s strict requirements when it comes to ageing. The estate was founded as recently as 1987, by Mario Rotllánt Solá and Carmen Daurella de Aguilera, who enlisted the help of Rioja expert Agustín Santolaya. Since then it has quickly risen up the ranks and is today regarded as one of the region’s top producers.  From the start, their philosophy has been centred around sourcing the finest clones of Tempranillo. It has proven to be remarkably successful in producing very pure expressions of Rioja, not dominated by oak, but that also age beautifully. These wines are some of Spain’s most exciting, sitting amongst a cohort of producers dedicated to finding the true potential of the country’s indigenous grapes, with old vines and top terroirs. Only made in the best vintages, Cirsion is Bodegas Roda’s top wine – a wine that defies the notion that the best wines should see the longest oak maturation. On the contrary, Roda’s Cirsion sees the shortest time in oak of all its cuvées – just six to eight months, depending on the vintage. The wine was first made as an experiment in 1997, with just 3,000 bottles. The aim was to celebrate Tempranillo’s character by using fruit from only the oldest vines and best clones. Each vine would be individually assessed and picked at optimum ripeness. The result is a wine with seamless tannins and exceptional fruit purity. Cirsion’s appearance on the wine scene challenged the idea that highly concentrated Tempranillo required significant oak ageing to tame its astringent tannins. Roda proved that if the grapes are good enough, the fruit could shine without a cloaking of oak. Despite the shorter time in barrel, tasting through older vintages proves the wines’ ageability. Winemaker Agustín Santolaya remembers at the release of their first vintage that the critics found it so accessible they thought it wouldn’t age well. Tasting the 2004 today is proof they were wrong. The wine is still maturing, full of life and all the more complex for it, as the tertiary notes mingle with beautifully fresh fruit and fragrant heather notes. At the heart of the wine is a core of pristine fruit, something that is retained even with age. It is a wine of great purity and elegance. Tasting through older vintages of Cirsion shows how the balance and quality of fruit in a wine is essential, and sometimes more important than oak ageing, when it comes to producing red wines that will age effortlessly. Bodegas Roda wines 2004 Cirsion There is a real brightness to the 2004 and today it sits firmly in its drinking window, although the overall balance and concentration will see it hold here for some years yet. It has a really inviting nose of red aniseed and dark spice alongside more tertiary moss and forest floor notes. The fruit is on the darker black berry spectrum with vibrant acidity making it feel so lively on the palate. There is lovely volume and weight to the wine, the tannins now fully resolved and melded with the fruit. (100% Tempranillo, 14.5% alcohol) 2009 Cirsion A key principle of Cirsion’s philosophy is to show the imprint of the vintage, the wine made entirely from that vintage – not such a common practice in Rioja. This is abundantly clear when tasting the 2009 and 2010 side by side. As Santolaya admitted, the ‘09 is a lot more tannic and less resolved than both the ’10 and ’04 – likely, he believes, the result of water stress in what was a very warm and dry (Mediterranean) vintage. The ’09 is texturally layered with lots of lovely ripe fruit and still silken, but with a bitter twist on the finish. It is a less typical vintage for Cirsion and, versus the exceptional 2010, a little more ordinary, but still very good. (100% Tempranillo, 14.5% alcohol) 2010 Cirsion The 2010 today is still very youthful – but the balance is fantastic – the tannins are plentiful but silken, the wine full of energy, with mouth-watering acidity and a dense, coiled-spring-like tension to the palate. At 11 years of age, the tertiary flavours are only just beginning to show. It has years ahead of it and will be wonderful to taste with another five years in bottle. The 2010 really captures the Cirsion philosophy of fruit purity above all else. The 2010 has proved to be a great vintage for Roda all round. (100% Tempranillo, 14.5% alcohol) 2018 Cirsion The 2018 is the latest release and while its tannins are nicely ripe and resolute, tasting alongside the 2010, you feel Cirsion (despite its youthful approachability) really benefits from at least five to 10 years in bottle. Its puppy fat stage is still quite oak laden, but again, the refined tannins are impressive and rare to find in Tempranillo of this concentration and richness. Finding Tempranillo’s true potential

There are few people that get to taste Bordeaux as often or as thoroughly as the Wine Advocate Editor-in-Chief Lisa Perrotti-Brown MW. Based in Napa, her knowledge of how the Bordeaux varieties are managed – both in Bordeaux’s moderate climate and the hotter region of Napa – has become a huge asset in understanding and assessing Bordeaux in a warming climate. With such exposure to vintages past and present, being mentored by the world’s most influential critic Robert Parker, there’s no one better to consider what defines Bordeaux today.  Perrotti-Brown has a clear idea of how and why Bordeaux has changed so much in the last 20 years, while at the same time emphasising that there’s no “hard stop” to an era. An individual château’s period of change can be different to its neighbours. “It seems like every château has had its challenging period,” she says, “whether it be a dogmatic winemaker, recurring faults in the winery or even financial difficulties.” Each era of Bordeaux is not simply defined by set vintages, however – with the benefit of hindsight – she believes you can see clear, defining moments over the last two decades where the style of Bordeaux has changed. Like much of the wine world in the 1980s and ’90s, Bordeaux châteaux were still understanding the effects of faults in their wines – whether it be volatile acidity, dissolved oxygen or Brettanomyces. With increased emphasis on ripeness and new oak, these issues only increased. “Brett and other faults love new oak and higher alcohol, it was almost a perfect storm,” she explains. But as this became more of an issue in the region, it led to more research, bringing about a much better technical understanding of why these things were happening. It was this scientific awakening that Perrotti-Brown believes was the catalyst for the modern era. “Momentum for change has sped up in the last 20 years and there have been lots of triggers,” she says. “There is a better understanding of what ripeness is, precision viticulture and winemaking, the development of technology and of course there is climate change.” But outside this and perhaps the most important “trigger” behind this change, she believes, is money. “To run a château has become very expensive: 30 or 40 years ago many of these châteaux were simply operating as agriculturalists, now it is a multi-million-dollar business.” Big money has no doubt brought about big investment and Perrotti-Brown believes in many ways it has “levelled the playing field”. A lack of investment in the winery and vineyard is now a rare excuse for poor performance. “It has raised the standard throughout the region. Investment and greater precision has created a lot of diversity – more than we have ever seen before.” In terms of taste, the most positive developments in Bordeaux for Perrotti-Brown come from the vigneron’s better understanding of ripeness, both in terms of tannin ripeness and fruit concentration. “Hindsight is a beautiful thing,” she quips, “but we have seen dark periods on both sides of the spectrum in Bordeaux.” There were real issues with lack of ripeness through much of the 1970s and ’80s. High production levels saw diluted grapes harvested and simply chaptalized (sugar added) to bring up the alcohol, then at fermentation, the must was overworked to extract enough colour and tannins. Since top Bordeaux was known for its long ageing potential, this was necessary to create the structure to age – “Otherwise you were going to end up with a diluted, watery mess,” explains Perrotti-Brown. This extended maceration saw the extraction of very hard tannins – “the wrong sort of tannins that come at a later stage of extraction”. “It is better extraction techniques, only extracting quality tannins, that is a major reason behind the most recent improvements,” Perrotti-Brown explains. She points to the legendary 1982 vintage. “A lot of people at the time were saying the tannins of the ’82s were too soft, too juicy, too fruity and it just wasn’t true.” The vintage was warm, particularly for that era. “At harvest the vignerons were picking grapes with a natural ripeness to the tannins, which meant during extraction the tannins and colour came easily.” They didn’t have to overwork the grapes to extract the tannins, producing wines that were great in their youth and have since aged incredibly well. It was the quality, not quantity, of tannins that stood the 1982s in such good stead, a lesson that wasn’t necessarily learnt instantly. Overworking the musts and a lack of concentration continued to be commonplace throughout much of the ’80s and ’90s. Many wines were hugely extracted and required plenty of patience. “You compare that with now,” she says. “I was discussing the 2020 vintage with Ch. Margaux’s Philippe Bascaules – and he barely needed to touch the grapes during extraction.” At better ripeness levels (as seen in 2020), the colour and tannins extract themselves. In the mid-90s to early 2000s, however, there was “a chase for ripeness”, in Perrotti-Brown’s words. “It was the beginning of the garagiste era – with reductions in yield, later picking and an emphasis on power. You had super low yields, producing behemoth, impenetrable wines in their youth, 200% new oak etc – people were really pushing the boundaries.” It is a style that is seen by many as actively encouraged by Perrotti-Brown’s mentor Robert Parker, who at this point was arguably the most influential man in Bordeaux. The incredibly hot 2003 vintage marked a watershed moment for Bordeaux. “Bordeaux winemakers had never seen anything like it. Grapes were turning to raisins on the vine,” Perrotti-Brown says. Despite the year’s conditions which exposed the push toward ripeness, the emphasis on power continued up until the 2010 vintage. Despite the focus on ripeness and extraction, there were some exceptional vintages – but Perrotti-Brown questions how well these wines have since aged. This is, in her view, a key shift in the region. She compares tasting the 2005s en primeur, with tasting the vintages of today. While 2005 was clearly a fantastic vintage, tasting these wines so young was really difficult, with aggressive tannins. Many winemakers were, Perrotti-Brown says, “making wines by formula”. A high-quality vintage gave vignerons a free ride to push the extraction even more. The criticism often made of 2005 is that it has taken such a long time to come around. Similar issues are raised with the same vintage in Burgundy. The year was at the height of the trend for maximum ripeness and extraction, for both Bordeaux and Burgundy, and the resulting wines shut down for a long period. Perrotti-Brown accepts that people have different expectations on when to drink Bordeaux, but she loves to drink wine in its mid-life, when there is both primary fruit and tertiary development. The problem with the 2005s, she says, is that that window never really opened: the wines remained closed, only beginning to open up now, when there is little primary fruit left. “Many of the ’05s are, wow, exceptional now, but you miss that sweet fruit and it’s what I like about the modern vintages,” she says. Looking back, “Winemakers could have dealt with 2005 much more wisely.” The 2009 vintage provides an interesting contrast. Like the ’82s, the natural ripeness of the tannins meant the wines didn’t shut down in the same way the 2005s did. Of course, higher levels of alcohol also helped increase the potential tannin extraction. Alcohol is a solvent. Increased ripeness, which in turn leads to higher alcohol levels, can therefore lead to too much phenolic extraction. While this was a risk for many wines in the early 2000s, fortunately today’s winemakers know much more about how to handle riper fruit. The 2010 vintage might have been the last year of big, bold, extracted wines, it was nature rather than the Bordelais that dictated the change, Perrotti-Brown notes. The ’11, ’12, ’13 and ’14 vintages meant winemakers had to deal with cooler, more difficult vintages. It was not possible to produce bold wines in these vintages and retain balance. This was almost a period of introspection for Bordeaux and, for Perrotti-Brown, it led to a distinctive development where “the ethos of precision” took charge from the 2015 vintage. While there are of course exceptions, from 2015 Perrotti-Brown feels you started to see more plot-by-plot management of the vineyard, with picking times becoming much more accurate – picking plots and fermenting them separately, “rather than throwing everything together”. Extraction also became much more precise, focusing on only the quality tannins – a marked change from the previous era. This new ethos brought, in Perrotti-Brown’s view, a lot of “soul-searching” in the vineyard, with people like Alfred Tesseron spearheading a movement toward more sustainable practices. But overall, Perrotti-Brown notes, “There is so much creativity too and many people are doing different things. It has created a lot of diversity.” Amongst the creative changes happening in the winery and vineyard, developments in the wine’s élevage always seems to be a big talking point in Bordeaux. Oak is an integral part of the Bordeaux “recipe”, but – after an over-reliance in the 2000s – its use was becoming increasingly scrutinised. “Oak doesn’t ever go,” she says. “It settles down, integrates and evolves with the fruit, but it can push itself forward.” “Oak is absolutely necessary for giving shape and spice to the fruit, as well as tannic interest to the wine,” says Perrotti-Brown: for her, it’s about oak being used “smartly”. “Most people have pulled back on the new oak from the 2015 vintage onwards, but, like the tannins, it is not about more or less oak, but about using it more wisely. There is a much better understanding of oak today and much better quality of oak being used. What it lends to the tannin structure is a nice back up to the skin tannins and a spiciness in the background.” The new era – from 2015 onwards – is certainly contributing to Bordeaux being “on a good run”, in Perrotti-Brown’s words. But while there is great consistency today, she’s under no impression there won’t be problems ahead. “Warm, dry vintages have become the norm, but how warm and how dry before this becomes an issue? Bordeaux was lucky in 2020 that they got a bit of rain in August,” she says. While a lot has changed over the last 20 years in Bordeaux, there are no guarantees for the future. No matter the technology, Bordeaux’s fate lies in the hands of the shifting climate – and terroir, or more specifically the clay or limestone soils equipped to deal with hot, dry conditions, has never been so important. For now at least, though, Bordeaux is basking in its era of precision, with 2020 the third great vintage in a row. Let’s hope Mother Nature holds the region in her favour a little longer. It’s often noted that Burgundians know nothing about Bordeaux and its wines – and vice versa. This is an exaggeration, though it retains a nugget of truth. These two great French wine regions are poles apart culturally. This is not a novel observation. Indeed, Jean-Robert Pitte, a professor at the Sorbonne, wrote an entire book, Bordeaux Bourgogne: Histoire d’une rivalité (2016), on this very theme. Just a couple of examples. In Bordeaux you will encounter people with names such as Basile, Vanessa, Diana or Jennifer – that would be inconceivable in Burgundy. This may be to do with the fact that Aquitaine was English-owned for centuries, or it may be that some Bordelais believe that an English name confers a certain cachet. At celebrations organized by the Chevaliers du Tastevin at Clos de Vougeot, and just about anywhere where Burgundy’s wines are praised and consumed, the ban bourguignon is an unavoidable part of the proceedings. It entails raising both arms in the air and twisting them in time to a raucous ditty with the words ‘Lala, lala, lalalala layla, lala, lala, la, la, la’. Can you imagine such a thing at Haut-Brion? Another striking difference is that Burgundy excludes, while Bordeaux includes, at least in terms of embracing those it considers helpful to its promotion, such as merchants, auctioneers and journalists. I have visited Burgundy and its growers every year for over three decades and can count on the fingers of two hands the number of times I have been invited to stay for lunch, let alone dinner. Without fail, a 10.30am appointment will come to an end at noon, and the visitor will be politely shown the door. Hungry after a morning of tastings? That’s your problem, monsieur. I used to find this irksome but soon came to understand that for the Burgundian, noon is the time when family members return to the homestead from pruning or tractoring or delivering bottles. It’s the sacred lunch hour, and outsiders have no place. You can taste from every barrel in the cellar, but that hospitality doesn’t extend to the dining room. It’s the exact opposite in Bordeaux, where it’s assumed that a visitor with a late-morning appointment will stay for lunch. Indeed, when researching one of my books in Saint-Emilion, I was amazed to find that my programme, organised with enthusiasm by the local syndicat, included lunch and dinner every day, weekends included. The Bordeaux proprietor will usually use the occasion not just to offer a fine meal, but to open some older vintages for the delectation of the visitor. The Burgundian really couldn’t care less. On one occasion, a grower with whom I spent a morning to research a profile for a magazine, had suggested, when I made the appointment, that I might like to stay for lunch. With pleasure, I responded, hoping that a mature Richebourg might be brought up from the cellar for my appreciation. But sur place, when I had completed my interview, it was clear that the owner had completely forgotten his offer. (However, after an embarrassing few minutes all around, his wife did rustle up a rather good meal.) Born to be hospitable Burgundy’s wine culture is about the nuances of terroir; Bordeaux is about selling wine that’s produced in far larger quantities than from patchwork Burgundy, and all those who can serve that purpose are corralled into a network of hospitality. A lunch will always take the same form. Coats and bags are deposited in the hallway of the château and one is led into a salon, where a small table supports a bottle of Champagne (often Pol Roger, sometimes Bollinger) and some glasses.  In comes the butler or maid (often on hire from the local traiteur, or caterer) with a plate of gougères or roundels of toast with foie gras to stimulate the appetite. Then the host rises to his (and occasionally her) feet and leads the way into the dining room. Lunch is invariably a butler-service event, so guests must calculate how much meat or veg to convey onto one’s plate without either appearing greedy or depriving others of their fair share. The dishes are always replenished, however, so seconds are in order. No need to panic. If the aim is to impress, it usually succeeds. In contrast, the Burgundians en fête are after a good time. Other than the rather forced jollity of the Chevaliers du Tastevin dinners, usually accompanied by indifferent wines, the highlight of the Burgundian wine calendar is the Paulée de Meursault (other paulées are available, but all agree that Meursault does it best). This is in effect a giant bottle party. Each producer, who may be accompanied by family or guests, will bring a basket stacked with a few bottles or magnums of a venerable or prized vintage. These will be poured and later circulated in the course of a five-hour lunch. Those lucky enough to attend can often taste spectacular rarities. This is not the Bordeaux way. At a formal dinner, for example during the en primeur tastings or Vinexpo, invited merchants or journalists will find themselves at a large round table in the company of two or three château owners or winemakers. They will have brought bottles – often very fine bottles – that will, in due course, be delivered to your table. There’s a certain amount of swapping with other tables to provide more variety, and certain journalists, towards the end of the evening, will be seen roving the room in search of wines to try on distant tables. (I plead guilty.) Here again, the aim is to impress. Brigades of waiters and waitresses, quite often students from a local catering college, will swoop in from the kitchen with such efficiency that a few hundred guests can be served almost simultaneously. Moreover, the food will usually be excellent, provided by one of the many highly professional traiteurs who flourish in Bordeaux. Access is the name of the game. The privileged guest, sipping Champagne or Sauternes during the prolonged apéritif hour before a grand Bordeaux dinner, will be in the company of dozens of château owners. Reach out a hand, even to someone you’ve never seen before but vaguely recognize, and it will instantly be shaken: ‘Bonsoir, monsieur.’ Everyone present is within the magic circle. You have been appointed, like it or not, as an ambassador for Bordeaux. Over 20 years ago I was present, along with 400 other guests, at the Fête des Vendanges, a great feast organized each year before the harvest by a leading château. I could see from the menu that 1985 Haut-Brion was to be the final wine of the evening, but what I hadn’t anticipated was that it was to be served in magnums only. Moreover, on a very warm evening each magnum had been lightly chilled before serving to ensure that it would retain
its freshness and digestibility in the glass. Other blandishments include guests of honour who are often prima donnas or celebrated actresses. Who wouldn’t want to be around when, as once happened, Gina Lollobrigida was escorted between the tables by the château owner? These feats of generosity, glamour and service are to be observed at all such events in Bordeaux. If you’re lucky enough to be present, it’s hard not to experience a wave of self-satisfaction. This warm embrace of the wine trade is not extended to mere consumers, of course. Although châteaux are more open to visitors than they were in the past, most wine tourists making their way up the roads that connect Margaux to Saint-Julien and Pauillac are confronted by closed gates or notices that read ‘by appointment only’. Some 25 years ago a delegation of Bordeaux worthies came to London to ask friendly journalists (over a good lunch, of course) what they could do improve the image of their region. ‘Try opening your gates,’ was my suggestion, and it did not go down particularly well. Fees, factotums and fixers Oeno-tourism has been slow to come to Bordeaux. Showcase châteaux such as Pavie, Smith Haut Lafitte or Lynch-Bages have become adept at offering tours and tastings, though at a price. A fee is understandable, as the cost of staffing the tours and the wines to be poured needs to be recouped. Napa does it differently. Visitors are courted, and the customary tasting fee will be refunded if you buy a bottle or two. In Australia, the ‘cellar door’ is always open for visitors to enjoy the wines and other merchandising. However, in Bordeaux, most prestigious châteaux make little effort to welcome visitors.  In Burgundy, top growers sell to a band of importers and perhaps a few private customers and restaurants. In Bordeaux, châteaux sell to négociants, who distribute their wines worldwide. Châteaux have no direct influence over who sells or buys their wines. That’s why it’s important to have influential writers and critics on their side. A high score from a wine guru may just persuade a group of merchants or consumers to buy Château X in preference to Château Y. And the other way around the following year. No wonder top châteaux treat the media with affection and respect. Consultants, too, form part of the hype machine. They are rarely present in Burgundy, where savoir-faire is passed down (not always successfully) from one generation to the next. But in regions such as Tuscany or Bordeaux, where estate owners are often rich and enthusiastic but short on expertise, the consultant is an essential member of the team. Nothing wrong with hiring good advice, of course. But choosing the right consultant also adds lustre to the estate. In Italy, take on Carlo Ferrini or Riccardo Cotarella and you can be certain, at the very least, of media attention. In Bordeaux, the consultant is more than an adviser on viticulture or vinification, suggesting how high your canopy should be or which coopers are best suited to your style of wine. They have influence too. Michel Rolland, notoriously, had the ear of Robert Parker for many years. This was perfectly understandable because, broadly speaking, they liked the same style of wine. I once asked a château owner with a group of properties why he had chosen a particular consultant rather than another of similar renown. ‘He’s good at what he does,’ was the reply, ‘but he also has a track record of getting his clients’ wines onto airline lists.’ Many of the older generation of consultants were invisible. In decades of visits to Bordeaux, I never encountered Jacques Boissenot, who advised most of the top estates of the Médoc, or Gilles Pauquet in Saint-Emilion. Others, such as Stéphane Derenoncourt, court importers and the press assiduously, with regular tastings that provide a showcase for all their clients. Wine writers like, for sound reasons, to be on close terms with consultants such as Derenoncourt, as they can be invaluable sources of information. Save time and score it? Admission to the magic circle of Bordeaux carries its own risks. I doubt there is much corruption as such – no wine writer of any importance would, I assume, be foolish enough to accept backhanders in exchange for favourable ratings – but what has happened is that independent assessment has been almost abandoned. And there are stories of bribes, often in the form of a few cases of wine, being offered. Newly minted bloggers would be particularly susceptible to a helping hand. Back in the 1980s or even 1990s revered critics such as Robert Parker would not hesitate to give a poor score to a wine he considered below standard. These days a poor score has become close to inconceivable. A score below 90 has become the equivalent of a smack in the face. In an article some years ago I predicted the scores that the major critics would give the 2014 vintage when, a few months later, the wines became available for tasting En Primeur.  My educated guesses, made without tasting a single wine, were alarmingly accurate. That, simply put, is because critics now score the brand and not the wine. No one is going to rate a first growth or scarce Pomerol at below 96; likewise, no obscure fifth growth or Côte de Bordeaux red, however fine, will ever be scored at 93 or higher. Bordeaux has succeeded in imposing its own self-valuations on its critics. Price has become equated with quality, as has been the case since the 18th century. This is why new owners of certain properties relentlessly push up their prices, because this is the best way to confer prestige on the wines. For Bordeaux as a whole, it may be a costly business organizing lavish dinners with superlative vintages, but it has paid off in establishing a group of wines as safely within the band of the world’s most appreciated and sought-after. For the wine critic, it’s a tricky balance. Without access, an article or vintage assessment becomes impossible. I am not immune. To research my own publications on Bordeaux, I have accepted offers to stay at comfortable châteaux for extended periods. I do my best not to let my judgment be swayed by this quid pro quo (which I disclose), but one can never be certain. Schmooze or you lose? It’s not only the wine press that is courted and pampered. Top châteaux will lay on lavish feasts for négociants and brokers too. Corinne Mentzelopoulos of Château Margaux once described such events as a way of thanking the Bordeaux wine trade for their success in selling her wines (not an arduous task, I would have thought). She intimated that it was also a way of keeping the trade on her side. Selling top claret in a great vintage is a doddle (except when grotesquely overpriced); selling the same label in a mediocre year such as 2013 is another matter. Maintaining brand loyalty – to Brand Bordeaux and individual châteaux – is crucial. By 2020 the region was having to face the threat of USA tariffs, the cold shoulder from China, the uncertainties of Brexit for the important British market, not to mention the growing climatic vagaries bringing drought, frost and hail in their wake.  Other challenges are stylistic rather than economic. A colleague who is involved in assessing the wine lists of top restaurants worldwide notes that there are a growing number of such lists that ostentatiously scorn Bordeaux in favour of, usually, ‘natural’ or other styles considered trendy. This is sommelier-driven, and Bordeaux producers and merchants are not always aware of how old-fashioned and stuffy their offerings appear to sommeliers (and their clients) in search of novelty rather than reliability. It’s hard for individual châteaux to promote their wines worldwide since they don’t know precisely who is buying their superb wines. In contrast, their Napa Valley equivalents stage auctions and other events targeted very precisely at super-rich clients and social media. Australia has its highly regarded agricultural shows, awarding medals that confer more prestige than most medals from wine competitions.  Bordeaux doesn’t have such marketing opportunities at its disposal, which is why generic marketing campaigns, prestigious tasting events, and the assiduous wooing of the media are such necessary tools. Whether they will continue to be effective as they have been in the past is undoubtedly open to question. Whilst for some of us a trip to Italy still seems far away, this postcard from Florence provides us all with inspiration for our future adventures. As a wine lover and epicurean, how would you best spend 24 hours in Florence? 
I’m a great epicurean or as we say here in Italy I’m completely into “dolce vita”. Florence has so much to give that after one life spent here I’m still surprised and astonished by the beauty you can find behind every corner. I love to have an early morning walk along the Arno river, there is a very easy path that follows the two banks.  Walking from bridge Santo Spirito to San Niccolò bridge and back when the city wakes up gives me cheerfulness and the good mood to start the day. A good espresso in one of the many caffetterie on the way and life smiles! If the day is not too hot I’ll probably climb the hill of Michelangelo from the San Niccolo gate and enjoy the best view of the city from Piazzale Michelangelo and the church of San Miniato. 
 At this point, I’ll probably descend from “via dell’erta canina” for a sandwich and a glass of wine at “Fratellini”, one of the oldest and most traditional kiosks of the city! Ill end the day resting in Boboli garden, the Medici private backyard of Palazzo Pitti before heading to “Santino” for a classic aperitivo in the smallest and cutest bar of the city. 
What are your top drinking spots in the city? 
When it comes to wine Florence has a lot to offer. The best places to enjoy a class of wine will be the Sesto, terrace bar of the Excelsior Hotel or the rooftop bar of Hotel Lucchesi, both with an amazing view and great wine lists. But my favourite place is Aurora, our new winery in Fiesole, with an amazing terrace overlooking the city of Florence, Chianti and the hills that frames the city. What is your favourite neighbourhood restaurant in the city?
 I love the traditional restaurant Cammillo, it is one of the oldest Trattoria of the city, still managed by the same family. It is chaotic but the atmosphere is warm and the menu rich of traditional dishes hard to find elsewhere. 
 What is your favourite dish they serve? 
Trippa alla Fiorentina, amazing! 
What are the culinary specialities of Florence and the surrounding area? 
Florence has a very rich cuisine, starting from aged salami, cheeses and charcuterie like finocchiona (made by the leftover of the pigs), but also pasta and soups like Ribollita (winter black cabbage and bread soup) Pappa al pomodoro (summer tomato and bread soup) or Tagliatelle that could be served with Cinghiale (wild boar) Lepre (hare) but the king of our cuisine is the Bistecca Fiorentina, a 2 kg steak served rare to medium-rare and made of Chianina beef. But don’t forget desserts like “Zuppa Inglese” or Cantucci and Vinsanto, the best way to end a heavy meal! 
If budget was not an issue where is the finest place to dine in Florence? 
Easy to answer: Enoteca Pinchiorri (three-Michelin), amazing food and probably the best wine list in the world. I’m very linked to this restaurant, it was my very first client in the world and for a few years Pinchiorri got all my production of Colore purchasing until the last drop of the wine! 
Florence has some world-class cultural sites. What is your favourite place to visit? 
My top three are: the Uffizi museum, you can’t leave Florence without a view of Venere and Primavera of Botticelli (and a good coffee on the rooftop bar of the museum), Santa Maria del Fiore (the duomo) with the adventurous walk to the top of the church and last but not least a visit to Fiesole village with its beautiful monastery. 
Is there an off the radar place in Florence that visitors should not miss? Florence can be very touristic and loud during high season but there are some places a bit off the radar like the “Giardino delle Rose” (the roses garden) beautiful in spring with hundreds of different roses or when open the Forte Belvedere with the Garden of Villa Bardini. 
 Florence is closely situated to the world-class wine regions of Tuscany – Where are the best places to visit for scenery and to discover the wine country? 
I will base myself on the hills overlooking the city, Fiesole can be the perfect base to visit the city and get out of the crowd when necessary. And from there move to Chianti Classico, Panzano in Chianti and Castellina are two lovely villages 30-40 mins away. If the plan is to visit Bolgheri or Montalcino better to base yourself on the coast or Siena. 
Where is the best place to enjoy your wines in Florence? 
I’m proud to say that our wines are considered the “local wines” in Florence, my winery is the closest winery to the city and I have been privileged for this reason, I’m the Florentine winemaker and my wines are very easy to find in most of the places in Florence. I get the occasion to toast to all our friends that I am sure I will be able to meet here again soon with a good glass of wine. Read more Editorial
