The Connacht Distillery’s Batch One is made from 100% malted barley grown at 11 County Wexford family farms in the Hook Peninsula. The whiskey is double, rather than triple, distilled in bespoke, atypical copper pot stills before being matured in ex-Bourbon barrels, and finished in Sherry casks. The resulting liquid is fresh, vibrant and like a sunny early autumn day. It opens with an aromatic grassiness before a hearty scoop of cereal notes arrive, lifted by fragrant citrus peel. On the palate, the whiskey continues its malt-forward evolution with the mouth-watering addition of caramel, honeycomb, and apple crumble. With time, richer base notes emerge, including a dark, warming ginger and furniture polish, contributing to the generous mouthfeel. The finish returns to its bright, citrus-led, orchard fruit-backed demeanour, with a gently lingering warmth. A magnificent introduction to modern Mayo whiskey.
