“It’s difficult when you don’t have vines, a winery, any equipment or money,” Stéphane Dief – co-owner and winemaker at Clos Manou – tells me. “You say you want to be a winemaker, but it is complicated. Our advantage, however, was being able to do exactly what we wanted.” Over the last 25 years, he and his wife Françoise have slowly grown their tiny estate in the northern reaches of the Médoc, beyond Saint-Estèphe, where they make wine that offers some of the best value in the region.  Saint-Christoly-Médoc – the miniscule village that is home to their domaine – is where Stéphane grew up, while Françoise is from less than 15km away. Although Françoise’s family had vines, neither she nor Stéphane were working in the production side of the business, but they fell in love with wine. Via his brothers-in-law – who worked at Ch. Mouton Rothschild and Ch. Rauzan-Sègla – Stéphane started tasting some special wines, buying older vintages at auction – and was soon determined to give it a go himself.  Together, the couple bought a mere 12 ares and produced their first vintage in 1998, 600 bottles that they labelled as Clos Manou – “Clos” because they felt it wasn’t grand enough to use “Château”, and “Manou”, Stéphane’s nickname. It was such a success that their hobby rapidly became a full-time gig and the duo left their day jobs in 2000.  In some ways it doesn’t sound like they were doing anything remarkable. They wanted to make attractive wines that reflected their site, and to do so with precision and care. Their ambitions were modest. And yet, for Bordeaux, their small-scale, hand-crafted approach was – and is – atypical.  They sought out specific parcels of old vines, those planted before clonal material became commonplace, favouring the natural complexity of massal selection. They chose to work only with high-density vineyards – around 10,000 vines per hectare, a point at which Stéphane feels the vines self-regulate, meaning there’s no need to green harvest and often less de-leafing required.  In principle, they are close to organic – however, in a bid to avoid dependency on copper, they use bio-controls that aren’t permitted under organics, specifically phosphonic acid. They don’t use any herbicides, insecticides or chemicals – but believe that copper, as a heavy metal that kills soil’s microbiome, is best used minimally, and they prefer to use something that doesn’t leave trace levels in the final wine.   Almost everything is done by hand, with 12 full-time employees working on the estate. There are no protocols or routines. “We do things by watching, observing our vines and drawing conclusions and echoing those conclusions the following year,” Stéphane says.  The 2003 vintage was a turning point. Robert Parker gave the wine 93 points – an incredible score for such a modest Médoc, writing that it was “better than many of the vintage’s ‘big’ names”, “drop-dead-gorgeous” and a “prodigious effort”. Given the critic was at his peak, his influence was significant – and suddenly Clos Manou was in enormous demand.  “C’est notre métier, mais notre passion aussi," Stéphane says – “It’s our profession, but it’s our passion too." That explains perhaps why, for 11 years, he didn’t take a day off. “My wife wasn’t very happy with me,” Stéphane tells me, laughing cheekily.   Today they have 18.5 hectares of vines, scattered between Saint-Christoly-Médoc and Couquèques, all within a three-kilometre radius. They sit across three different soil types – gravel over clay, limestone-clay and sand, with some sitting very close to the estuary itself. Stéphane thinks of them as three children – one of which, the gravel over clay, is naturally gifted. But just because the other two need a bit more work, doesn’t mean they are any lesser. There is, he says, no such thing as “un petit terroir”. One special parcel dates back to 1850. Planted before phylloxera swept through the region, it’s managed to survive thanks to its sandy soils. In certain vintages they make a special “Cuvée 1850” from the block.  Despite the vines averaging 45 years in age, the yields are generally good – sitting at around 50hl/ha. Stéphane emphasises that low yields don’t equate to better quality, necessarily – the balance of your vines is what matters most.  It’s undeniable that climate change has been a benefit here, beyond Saint-Estèphe, where once it was a struggle to ripen fruit. In 2018, Clos Manou had 15% alcohol – but, thanks to their clay soils, the pH was a vibrant 3.52, bringing great freshness to balance the wine. He’s still thinking about the long-term impact of the rising mercury, however, and experimenting with small portions of whole-bunch, inspired by the likes of Guillaume Pouthier at Les Carmes Haut-Brion. Stéphane feels that it can add tension and make the wines feel more dynamic, even on just 5% of the blend. “On est des vrais vignerons – comme il y a en Bourgogne," Stéphane tells me ("We are true vignerons – as there are in Burgundy"). Unlike larger properties where there are various directors who influence decisions – it’s just them deciding what to do. Despite looking further afield for their inspiration, he and Françoise don’t want to go against the grain of the region. “We want to be a bit unorthodox, but we are nevertheless Bordelais,” he says.  Clos Manou is, in essence, a family business. There’s nothing remarkable about their modest ways, but their freedom to start with a blank page has allowed them to create something that is no longer the norm. Inspired by the Bordeaux of yesteryear, everything is low-tech yet done with great precision. The wines are fresh and pure, yet distinctly savoury and earthy – with a natural intensity that points to their old vines. You can see the addition of larger oak and amphorae in more recent vintages, bringing more vibrancy. They are somehow rustic yet fine. The Grand Cru wines of Alsace and in particular the wines of Zind-Humbrecht are some of the most transparent and detailed aromatic whites out there. The wines from the single-vineyard sites in particular have all the breeding to be some the most complex white wines in the world. The wines are barrel-fermented in the old traditional oak foudres using only natural yeasts, typically taking a staggering 12 to 15 months to ferment.  As a comparison, most white wine takes just two to three weeks to ferment. The reason for the long ferments is to do with the high acidity levels in the wines, pushing them right through malolactic fermentation, and Olivier’s insistence on only using natural yeasts during fermentation. He wants to ferment his wines to dryness and with grapes such as Riesling and Pinot Gris from Alsace, this means a long wait. The wines are then aged on their lees and bottled, unfined and filtered, directly from the original cask 18 months after harvest.  Tasting the single-vineyard sites from Zind-Humbrecht provides a fascinating exploration of site, variety and vintage that is rarely laid so bare. The wines have as much intensity and intrigue as Grand Cru Burgundy, yet they are distinctly Alsatian in style, with their power, warmth and spicy mineral complexity defining its sense of place. Another distinct element to the Alsace region is that within the same vineyard each of the four permitted Grand Cru varieties - whether it be Riesling, Pinot Gris, Gewürztraminer or Muscat – are free to flaunt their individuality within the same site, providing different interpretations of the dominant terroir through the characteristics of each variety.   

Two of the most complementary and contrasting single-vineyard sites within Zind-Humbrecht’s portfolio are the limestone-rich Clos Windsbuhl vineyard in the Hunawihr region in Central Alsace and the volcanic Clos-Saint-Urbain vineyard located in the most southerly part of Alsace, within the Grand Cru of Rangen de Thann – the most iconic and historic vineyard of the region. 
Clos Windsbuhl: limestone 
Clos Windsbuhl overlooks the church of Sainte Hune. A monopole site (owned entirely by Zind-Humbrecht), it isn’t actually a Grand Cru, although many believe it should be. It sits directly above the Grand Cru of Rosacker – the source of Alsace’s most cult wine Clos Sainte Hune. It has a distinct soil type, rich in limestone with clay and chalk on the lower part. It is one of the last vineyards to ripen in Alsace due to its high altitude (350 metres above sea-level). It is this cooling influence and slow ripening that creates the aromatic complexity typical of this vineyard. Nestled close to the Vosges mountains, it is protected from the winds but as one of the coolest sites in Alsace, Clos Windsbuhl performs best in a warm vintage such as 2018.   Tasting the latest wines from 2018, the pulsing drive in all three wines – Riesling, Pinot Gris and Gewürztraminer – is obvious, no doubt the limestone soils providing this distinct tension and focus. Despite the pulsing drive, the wines remained controlled and very elegant. Olivier believes it is this finesse and elegance that is the defining characteristic of Clos Windsbuhl.  2018 Riesling Clos Windsbuhl The Riesling has a strong limestone presence, taut structure and pulse. It’s so linear, but with contained fruit – honeyed pink apple and white peach. In some ways it shares strong similarities with white Burgundy. 
2018 Pinot Gris Clos Windsbuhl The Pinot Gris has a slightly oilier texture, and an additional lushness. Despite this, the limestone still plays a very strong role in this wine – poised, taut acidity pulses through the wine. It does not have the aromatic camouflage of Riesling, the chalky minerality is even more. Very powerful and elegant – forward drive seems very characterful of Clos Windsbuhl. 
2018 Gewürztraminer Clos Windsbuhl 
The Gewürztraminer has a beautifully focused rather than flamboyant nose of lychee and white flowers. Noticeable residual sugar gives the wine a lovely creamy textural quality, yet the energy and poise so typical of the vineyard is still very present, giving the wine lovely balancing mineral freshness. Olivier states that this Gewürztraminer has the same tannin levels as a red Burgundy!  Clos-Saint-Urbain: volcanic sandstone Clos-Saint-Urbain sits within the Grand Cru of Rangen de Thann and is Alsace’s most southerly vineyard with a unique composition of highly mineralised volcanic soil (unlike any other site in Alsace). With its south-facing steep vineyards, the vines get incredible sun exposure, and the dark reddish-brown soil heats up like a furnace.  All these elements help the grapes reach high levels of phenolic ripeness, while the altitude of 350 to 450 metres means the vines are some of the most late-ripening, with the harvest often taking place two to three weeks after the start of the harvesting period in Alsace. The altitude and poor soils also protect the acidity in the wine, together producing some of the longest-lived white wines ever made. Decanter’s Andrew Jefford describes the Rangen vineyard as producing "the ultimate terroir wine", and it has even been nicknamed by many as "the Montrachet of Alsace".

Like Clos Windsbuhl, Clos-Saint-Urbain has similar intensity and strong mineral presence, though the mineral profile is really very different. It is much flintier and smokier, almost a touch of peat-smoke. All the three varieties are much more savoury on the palate. Whereas the fruit is more present and pristine in the Clos Windsbuhl, in the Clos-Saint-Urbain, the fruit is more caramelised and plays second fiddle to the volcanic minerality. 
 Riesling 2018 Clos-Saint-Urbain This is expressive on the nose, dominated by flint, chalk stone and caramelised lemon. The tension is remarkable. With the high mineral content comes real intensity and power too. Quince, lemon sherbet and a strong salinity creates an expansive mouth-watering finish. This is epic.  2018 Pinot Gris Clos-Saint-Urbain This rich, full-bodied, opulent Pinot Gris has heat-fuelled flint and smoke characters. The wine has a very creamy mid-palate, a silky and supple texture with gorgeous apricot and nectarine flavours interspersed with the saline-tinged smoky minerality. Tension builds on the back palate, this is bold, rich Pinot Gris, but with plenty of focus and a mouthwatering finish. 2018 Gewürztraminer Clos-Saint-Urbain The Gewürztraminer has a wonderful smoky, peat-like nose with plenty of ginger spice, classic lychee aromas and flinty minerality. Exploring Alsace’s terroir: Clos Windsbuhl versus Clos-Saint-Urbain

The Clos des Goisses vineyard – originally known as Les Goisses – has been planted with vines since the 16th century and was well-known in the region long before it was ever made into a single vineyard wine. The name is taken from the local dialect “Gois” which means very steep. The vineyard is the steepest, directly south-facing in the whole of Champagne (between 30- 45% gradient), and the hottest site in the region. The plot was indirectly purchased by Charles Philipponnat's
grand-uncle Pierre Philipponnat who purchased it from his cousins, the Bouché family, after they were made bankrupt in 1935.  Pierre was well aware of the quality of the vineyard as it had already enjoyed some fame as “Les Goisses” around 1900, but had since been almost abandoned during the Phylloxera crisis, WWI and through the Great Depression period. Once purchased, Pierre Philipponnat immediately set to bottling “Les Goisses” in 1935. Its reputation really took off around the mid-'50s and it was around this time that its name was altered to Clos des Goisses. In the vineyard This 5.5-hectare narrow site is perfectly positioned to push the natural ripeness of the grapes to a level unmatched anywhere else in Champagne. In a region where there is an over-reliance on chapitalisation (the adding of sugar prior to fermentation to boost body and alcohol) as well as high dosage (the addition of sugar post-disgorgement to increase the perception of sweetness), there is little necessity of either in a vineyard site where good ripeness levels are reached every year. The vineyard also benefits from a pure Belemnite chalk soil that accumulates heat, further promoting optimum ripeness levels.  Clos de Goisses is very much dominated by Pinot Noir – a sun-loving varietal that brings weight, density, richness and red and black fruit flavours to the palate. Clos des Goisses is typically a blend of 65% Pinot Noir and 5% Chardonnay grown on the site, although this does vary from one release to the next. The 2006 vintage saw the first release of Les Cintres. This represented Philipponnat’s top single plot of Pinot Noir situated within the Clos des Goisses vineyard. These are some of the finest and oldest parcels (70+ years old) in the vineyard. For Charles Philipponnat, the intention was to show off the best parcels of Pinot Noir in a Burgundian fashion: one varietal, one place, one vintage.  Despite its prestige, Clos des Goisses is not a Grand Cru vineyard and for Charles Philipponnat, the Grand Cru/Premier Cru designation in Champagne is more an outcome of history rather than quality. He believes the classification system is not very precise because it concerns whole villages. He goes on to say: “It actually relates to the grape buyers' preferences before WWI. Whilst it roughly corresponds to the better areas, with chalky subsoils, it is not always very accurate. Mareuil sur Ay is rated 99% not 100% because the large buyers would rather have the grapes brought to their press houses in Ay than go fetch them in Mareuil, back before WWI." Mareuil vineyard owners have filed a request for Mareuil to be recognised a Grand Cru,
but no one wants to shake the lees too much in Champagne. An old local saying goes: “Ay le nom, Mareuil le bon”, meaning “Ay has the name, Mareuil the goodness”. Pierre Philipponnat used to have it printed on his labels and stationery. In the winery Champagne is a highly processed wine and whilst the terroir remains important, precision in the winemaking is essential. For Charles Philipponnat, it’s a sum of details, always keeping in mind quality, age-ability, and truthfulness to the House’s style.  Healthy and ripe fruit, careful pressing, using only the purer first press juices, and proper ageing on the lees are the most important steps. And at all times, avoiding green bitterness, as well as (at least at Philipponnat) the loss of fruit through oxidation. Outside of the vintage expressions of the single vineyard sites, Philipponnat is a strong advocate for the Solera ageing process and use of high proportions of reserve wines. Around one-third of reserve wines is typical in their NV wines adding complexity to the wine. Charles Philipponnat goes on to say that the solera system allows for older elements to develop complexity while keeping the blend fresh and protected from early oxidation. Clos des Goisse “L.V” 1995 The L.V. release of Clos des Goisses is the rarest bottling to come from the vineyard in which only a few hundred bottles are ever released. These are Champagnes that are aged for 25 years unmoved in the Philipponnat cellar and disgorged just six months prior to release. The
wines are only sold directly through “ambassadors” of Philipponnat of which Fine+Rare is proud to be one, with a few magnums reserved for auction sales. The L.V. is an intrinsically exceptional Champagne, a perfect reflection of the unique characteristics of an unparalleled, pure chalk hillside, and Philipponnat’s expertise in crafting wines.  Mineral and intense, it stands out for its great freshness and remarkable fullness. According to Charles Philipponnat, the Clos des Goisses L.V. collection "adds the complexity of Champagne aged in the best conditions to the wine’s characteristic freshness. The wines are protected from any oxidation by prolonged contact with the lees before their disgorgement. Based in the village of Morey St Denis, the domaine is today run by the ever-thoughtful
Benoit Stehly, the great grandson of Georges Lignier, who has been in charge of
the property since 2007.  It remains one of the great value domaines in the Cote de Nuits and the wines are undoubtedly the top-value picks from these top sites in 2018.  This week we met with Benoit in London for a second look at his 2018s, following our initial autumn tasting at the domaine. The times are changing Benoit’s honest approach to his viticulture, his confidence to experiment and his continual
strive towards creating “thought-provoking” rather than “perfect” wines, always makes for an inspiring visit. He is not one to shy away from making changes in the vineyard in accordance with the
undeniable rise in temperatures over the last decade in Burgundy. Warm vintages are becoming commonplace and therefore he thinks a fresh approach is required to make the most of it.  Benoit is unique in Morey in keeping a permanent grass cover in the vineyard creating competition with the vines and forcing deeper root systems. It also serves to increase humidity, off-setting the heat of a hot vintage and slowing down the ripening, thus retaining freshness and protecting against the grapes cooking on the vine.  It also protects against erosion as well as creating more biodiversity in the soils. Others in Morey have since tried and failed with the same technique and this he believes was down to his own luck. First planting the grass in 2012 he was fortunate to have had three consecutively wet springs that enabled the roots to bed in. His neighbours who have since tried have seen much drier Springs in 2014, ’15, 16, ’17 and not been able to maintain them. 
In a warmer vintage like 2018, Benoit looked to similar steps he took in 2015 to best deal
with the heat. He has thrown out the rule book of picking 100 days after flowering, knowing that in vintages like these the grapes ripen much quicker.  “Two distinct style changes today exist in Burgundian Pinot Noir due to climate
change”  Benoit believes the very real effects of climate change has seen two quite different
styles develop in the Cote du Nuits and in recent vintages this has only become further
exacerbated by ever warmer summers. According to Benoit, about a third of Burgundy producers, typically the younger (or at least younger-spirited vignerons), of which he includes himself, are picking on freshness. The older generation continue to pick on ripeness – governed by the general rule of picking 100 days after flowering.  Both styles have their advantages, picking later gives you fully developed aromatic
complexity but with the risk of escalating alcohol levels and less freshness. Benoit prefers to pick on freshness, retaining “classical” alcohol levels – between 13.2 – 13.6% abv and terroir specificity, whilst avoiding what he believes is over-ripeness in the fruit flavours. The risk seems to of paid off with his 2018s.  The French government no longer calls the shots in a warmer Burgundy Picking times were regulated by the French government in Burgundy up until 2005. The
practice was discontinued following the disastrous timing by the government during the very hot 2003 vintage in which they only allowed picking to start in September (too late for many). The delay was due to government officials unable to declare until they returned from their summer holidays. Many vignerons broke the law to save their crop, others were not so lucky. Following the outcry, the government in 2004 declared that producers could pick from August 1st, effectively making their declaration pointless. Ever since, the practice has
been discontinued. However, as Benoit explains, many vignerons had become reliant on officials to tell them when to pick, rather than making their own judgements. Abandoning the declaration exposed all the vignerons that had little understanding on when was the right time to pick. It also further debunked the now outdated notion that you pick 100 days after flowering. A fresh approach 
Many of Benoit’s neighbours, even in 2018, were still picking 100 days after flowering and in his opinion were producing overripe wines with huge alcohol levels. For Benoit, Burgundy over 14% abv loses its typicity and sense of place. He states how Burgundy has always been one of the coolest regions in the world to produce Pinot Noir, and in the past the leaner, difficult vintages were all too common.  Climate change has produced warmer, riper vintages which according to Benoit has at least given the vigneron more choice in the style of wine they want to produce. With the warmer weather, one can either opt for a fresher style or a riper style and this comes down to choice of when to pick.  For Benoit, the picking time is the key factor to get right and remains the most stressful time
of the year. With high temperatures and a persistent drying wind at harvest, picking times in 2018 had never been more important. Picking just five days later saw the alcohol level rise by 1%. Fortunately, Benoit was one of the first out in the Morey St Denis vineyards beginning to pick from the 5th September, with all the grapes in within 10 days, starting with his Grand Crus and ending with his coolest Village sites. The 2018 wines Chambolle Musigny 2018 The oldest vines dating back to the 1930s gives this village wine plenty of personality coming from two plots north of the Chambolle village whose soils are rich in iron. The wine has wild floral aromas and light mineral ferric notes with silk-like melted tannins. The purity of fruit on the palate is fantastic with great mid palate weight and expansive breadth. This is excellent
quality for village level. 
Morey St Denis 1er Cru 2018 Bright translucent purple colour with perfumed notes of violets, wildflowers and red berries. The palate has a lovely spectrum of fruit from vibrant crunchy blackberry fruit to more candied red cherry and cassis. This interplays with a more Morey-esque savoury tone of fresh soil, hints of sage and bay providing more refreshing earthiness to offset the ripe fruit. The tannins are beautifully integrated and very fine, well-balanced with refreshing crunchy acids. Morey Saint Denis 1er Cru – Clos des Ormes 2018 Benoit calls this his baby Clos de la Roche, sitting directly below the Grand Cru vineyard and sharing the darker spice, brooding fruit and complex perfumes of orange bitters and sweet herb notes alongside rich plush blackberry fruit. This is a very serious gourmand style of Burgundy that is built to age and will develop beautifully in bottle over the next decade.  Gevrey Chambertin 1er Cru Les Combettes 2018 Surrounded completely by Grand Crus, this has a lovely elegance and sweetness on the nose,
the intensity and generous character of top Gevrey and a really wonderful balance. Red fruits, raspberry, a touch of juniper, pepper, silky tannins that are already so soft and integrated. Mulberry and macerated raspberry on the finish. Great length and freshness. This is serious. 
Clos Saint Denis Grand Cru 2018 Vines between 60 and 70 years old – powerful red fruits with fresh peppery notes and minerality on the nose. Superbly balanced tannins with a light sweetness, an expansive palate of dark berries and cherries opening to a long and elegant acidity, which amplifies the minerality of the terroir. Dry and powerful, the spine of this Clos St Denis provides amazing structure and exciting length on the finish. Will age incredibly well.

Clos de la Roche Grand Cru 2018 Deep nose of blueberry and purple fruit, savoury herbs and spice. Tightly wound and intense, the palate shows a hint of dark chocolate, oak, dark cherry and red fruits. A chunky personality, touch of pepper on the finish and good length. So much potential here. 
Bonne Mares Grand Cru 2018 Grown exclusively on the red limestone soil (Morey-side) of Bonnes Mares rich in iron, from 100-year-old vines. A captivating nose of mandarin, touches of spice and a broad spectrum of red and dark berry fruits. A core of red cherry and raspberry on the palate, mouth-watering acidity balanced by sensuous tannins. Structured yet elegant with an intense fresh berry finish. Outstanding. Explore more Editorial
